Open the pastry case of this Butternut squash and blue cheese Wellington to release the fragrance, then tuck in! This fabulous vegetarian take on Beef Wellington is oozy and unctuous with golden butternut and a good blue cheese bite – one of our favourite vegetarian Christmas dishes.

And on the topic of pastry-wrapped delicacies, this Melty Mushroom Wellington from BBC Good Foods’ Barney Desmazery is a winner. Replace the cheese with hummus, if you like – that’s also delicious. The Wellingtons are great for freezing for any festive occasion (but why wait?!)

Super easy to make and lusciously moist, Aubergine, courgette and pepper lasagna can be made ahead and reheated. (It tastes even better when the flavours have got to know each other really well.)

For dessert, there’s little to beat a pavlova on a hot South African day. Try this Christmas pavlova from Mary Berry, British doyenne of bakery and other delicacies. Her chewy meringue base is topped with pretty berries, but most fruits work well, so use whatever’s in season. It’s a winner!
